Aloo Puri is a North Indian plate of deep-fried puffed bread with a spiced potato curry, eaten as a heavy, celebratory breakfast or a road-trip meal. The pairing is the whole identity: *puri* is unleavened wheat dough rolled thin and fried so it balloons into a hollow, crisp-then-soft disc, and it is built to be torn and used as a scoop for a loose, gravied potato. The angle is the interplay between hot fried bread and a soupy, well-spiced *aloo* that soaks into it.

The build runs in two tracks that meet on the plate. The potato curry is cooked first so it can sit and deepen: boiled potato broken into rough pieces in a spiced tomato or tamarind-tinged gravy, often turmeric-yellow, loosened with water so it stays pourable rather than dry. The *puri* is fried to order, because it does not keep. Stiff wheat dough is rolled into small rounds and slid into hot oil, then pressed under the surface for a few seconds so steam inflates it into a sphere; it is pulled the moment it sets, golden and puffed. Good execution shows *puri* that balloon fully and drain clean, crisp at first and yielding underneath, with a curry that is properly seasoned, neither pasty nor watery, and tangy enough to carry the starch. Sloppy execution means flat, oil-logged *puri* that never puffed because the oil was too cool, a greasy heavy bread, or a dull, under-spiced potato that tastes only of turmeric and salt.

It shifts by region and by the sourness of the gravy. Some versions lean tamarind-sour, others tomato-forward, others spike the *aloo* with whole spices like fennel or nigella for a more aromatic edge; the curry can run thin and brothy or thick and clinging. A side of pickle or sliced onion often comes along, and *halwa* sometimes completes the festive version of the meal. The closely related chickpea-and-fried-bread plate, *chole bhature*, is a distinct and richer preparation and deserves its own article rather than being crowded in here. Aloo puri stays the lighter, potato-centered cousin, and it lives or dies on *puri* fried at the right heat at the right moment.
