A clear, anise-scented phở-style broth gives a lighter, soupier sandwich; a thick, sweet tomato sauce gives something closer to comfort food. Slicing the meatballs thin makes a tidy, even bite; leaving them whole makes a rougher, more generous one. There is also a curried *bò viên cà ri* treatment, fragrant and coconut-rich, that pulls the dish so far toward a stew-soaked baguette that it deserves its own article rather than being crowded in here.
