The constant frame is intact, the baguette with its thin crackly crust, the *đồ chua* of pickled daikon and carrot, cucumber, cilantro, chilli and a rich spread, but the seasoning logic tilts hard toward heat and garlicky sweetness, and the protein underneath is often whatever the shop runs, grilled chicken, pork, tofu, sometimes a fried cutlet, chosen as a carrier for the sauce.

The craft is the craft of restraint around something loud.
