The Bombay Vegetable Sandwich is the full-dress version of Mumbai's street sandwich: thin white bread, a stack of raw vegetables, and a sharp green chutney doing all the heavy lifting. It is served cold, built fast on a vendor's board, and judged almost entirely on how the layers are cut and how vivid the chutney tastes. There is no protein and no sauce hiding the work, so a sloppy one is obvious immediately.

The build runs in a fixed order. Trimmed white bread gets a firm coat of softened butter edge to edge, then a generous swipe of green *chutney* ground from coriander, mint, green chili, and a little lemon. On top go thin rounds of boiled potato, raw tomato, cucumber, onion, and beetroot, each laid in an even single layer rather than piled. A dusting of black salt and a sandwich masala goes over the vegetables, a second buttered and chutney'd slice caps it, and the whole thing is pressed lightly and cut into triangles or fingers. Good execution shows in the cutting: vegetables sliced thin enough to bite cleanly, potato cooked through but not mushy, chutney bright green and assertive rather than dull and watery. Sloppy execution means thick uneven slabs that slide apart, watery tomato and cucumber that soak the bread to paste, mean little smears of chutney, or beetroot bleeding pink across everything because it was stacked wet.

The cold, ungrilled form is the point here: this is the sandwich before it meets a *tawa*. The toasted and grilled descendants, and the cheese-laden versions, shift the texture and richness enough that they deserve their own article rather than being crowded in here. Within the cold version the common moves are an extra layer of boiled potato for heft, a heavier hand with the masala, or a thin schmear of ketchup alongside the chutney for sweetness. Done with thin even slices and a chutney that actually tastes of coriander and chili, it is one of the cleanest cold vegetable sandwiches anywhere; done carelessly it collapses into damp bread and crunch with no seasoning behind it.
