Ingredients

broodje · beef · curry sauce · mayonnaise · onion

The *Broodje Bal Speciaal* is the dressed-up version of the Dutch meatball roll: the same sliced *gehaktbal* in a roll, but finished *speciaal*, with curry sauce, mayonnaise, and raw onion. The angle is the word *speciaal* itself, which on a Dutch snack-bar menu is a specific instruction rather than vague praise: it means the curry-mayo-onion treatment borrowed straight from *patat speciaal*, applied here to the meatball. The result is a louder, condiment-driven sandwich where the sauces are doing as much work as the meat.

Build it in order, because the sequence is what keeps it from becoming a smear. The *gehaktbal*, soft and braised, is sliced flat and laid into a fresh soft *broodje* so it fills the roll. Curry sauce goes on first, the thick, mild, slightly sweet Dutch *currysaus* rather than an Indian curry, striped over the meat so it sets the base note. Mayonnaise follows, the full-fat Dutch *fritessaus*\-style mayo, for richness and tang against the curry. Raw onion, finely chopped, goes on last for bite and crunch. Good execution keeps the three condiments as distinguishable layers, the onion sharp and the meatball still the largest flavor in the sandwich. Sloppy execution drowns the *bal* until it is a vehicle for sauce, blends the curry and mayo into one pink slick, or piles raw onion so heavily it overwhelms everything else.

Variation is mostly proportion and one or two swaps. Some snack bars add chopped pickle or a dash of *sambal* for heat; others keep strictly to the curry-mayo-onion trio. The ratio of curry to mayo is where counters develop a house style. Stripped of the *speciaal* dressing this reverts to the plain *Broodje Bal*, meatball and gravy alone, which is a different and quieter sandwich that deserves its own article rather than being crowded in here. What stays constant is the discipline behind the loudness: *speciaal* is a defined finish, and a good one respects the meatball instead of burying it.
