Ingredients

broodje · smoked mackerel · butter · onion

*Broodje Makreel* is a smoked mackerel roll, a Dutch fish-stall and market staple built on a strong, oily, hot-smoked fish. Smoked mackerel is dense, rich, and assertive, with a deep savory smoke that sets it apart from the milder cured and fried fish in the Dutch roll family. The angle here is that this is a big-flavored sandwich where the fish dominates and the rest of the build exists to lift and cut it rather than to match it.

The build is short and the order is simple. A soft white roll, split, sometimes lightly buttered. The smoked mackerel is flaked off the skin and laid in generously, or sometimes mashed lightly with a little mayonnaise or lemon into a rough salad before going into the bread. The standard contrast elements are raw onion, a squeeze of lemon, or a few slices of pickle, all there to cut the oil and the smoke. Good execution is mackerel that is moist and freshly flaked with a clean smoke, paired with enough acid or sharpness to keep the richness from flattening, in a fresh roll that can stand up to an oily filling. Sloppy execution is fish that has dried out and gone stringy or fridge-stale, an overpowering rancid-edged smoke, no acid to balance it, or a roll so soft it goes greasy and slack under the load. The smoke and oil need a counterweight, and a bad version simply does not provide one.

Variation runs through how the fish is treated and what cuts it. Flaked plain it is cleanest; bound into a *makreelsalade* with mayonnaise, onion, and lemon it becomes softer and more spreadable while the smoke holds. A peppered hot-smoked fillet shifts the character without changing the method. The wider Dutch fish-roll tradition, spanning the cured, fried, and smoked members, is a broad subject that deserves its own article rather than being crowded in here. On its own terms, *broodje makreel* is judged on balance: rich clean smoked fish, a sharp element to cut it, and fresh bread that holds.
