Ingredients

bolletje · croquette · pork · peanut sauce · mustard

The *Broodje Satékroket* is Indonesian-Dutch fusion compressed into deep-fried form: a *kroket*, the breaded and fried Dutch croquette, with a peanut-and-satay-flavored filling, served in a soft roll. It belongs to the snack-bar tradition where a hot fried cylinder goes straight into bread, and it folds the flavor of *saté* and *pindasaus* into a *ragout* binder so the whole skewer-plus-sauce idea comes through one crisp shell.

The build is the classic *kroket-in-broodje* with a satay twist. A soft white roll, often a plain *bolletje*, is split and sometimes given a thin layer of mustard or butter. The *satékroket* comes straight from the fryer, shell crackling, interior molten, and goes in whole so it can be bitten through rather than spread. Good execution means a *kroket* with a thin, evenly browned crust and a smooth, well-seasoned peanut-satay *ragout* inside that holds together when bitten and tastes distinctly of *saté* rather than generic brown filling. The roll should be fresh enough to give but firm enough to stand up to the heat and grease without going slack. Sloppy execution is a soggy or burst shell, a gluey or under-flavored interior where the satay note is lost, or a stale roll that fights the crisp instead of cushioning it. The remedy is a hot fryer, a properly made *ragout*, and bread that is soft but not tired.

Variations are mostly about the condiment and the bread. Mustard is the traditional partner for any *kroket*, and it works here as a sharp counterpoint to the sweet, nutty filling, though some skip it to keep the satay flavor clean. A few counters offer it on a crustier roll for more contrast in texture. The straight peanut-sauce *Broodje Saté*, built from real skewer meat rather than a croquette, is the obvious relative and deserves its own article rather than being crowded in here, as does the broader *Broodje Kroket*. Done well, the *Broodje Satékroket* is a clever shortcut: the taste of a satay roll delivered through the crunch and convenience of a fried croquette.
