Ingredients

bulka · ham · butter · lettuce

The *Bułka z Szynką* is a roll with ham, the workhorse Polish *kanapka* in roll form. A fresh *bułka*, butter, and a fan of sliced *szynka*: this is the sandwich a *piekarnia* sells by the dozen and a household assembles for breakfast and the school bag. The roll frames it and the ham carries it, so the quality of the cured meat is the whole argument and there is nowhere for a poor slice to hide.

The build is brief and the small choices show. The *bułka* should be fresh, crust still crisp, interior soft, cut so the top keeps some bite. Butter goes edge to edge as flavor and as a moisture barrier so the crumb stays dry under the meat. The *szynka* is laid in folded or ruffled rather than flat-stacked, so each slice keeps its own surface instead of pressing into a single wet layer; two or three loosely draped slices eat better than the same weight stacked flat. A scrape of mustard or a few pickle rings is the usual lift. Done well it is clean and balanced, the ham reading clearly against buttered bread; done sloppily the roll is stale, the butter is skipped, and watery slices lie flat and limp with nothing to cut them.

Variations follow the butcher's case. A leaner build uses a good cured *szynka*; a softer one runs to a cooked, mild ham closer to *szynka gotowana*. A leaf of lettuce, a slice of tomato, or rings of cucumber turn it from a quick bite into a small meal. Adding a slice of cheese makes a distinctly different and richer sandwich, the ham-and-cheese roll, which follows its own logic and deserves its own article rather than being crowded in here.
