*Kokoretsi se Pita* is chopped grilled offal wrapped into a soft round, *se pita* meaning "in pita": the spit-roasted *kokoretsi* pulled off the fire, chopped fine, and rolled into a warmed flatbread as handheld street food. The angle is that the *pita* turns a rich, intense offal preparation into something you can eat walking, which means the wrap has to contain a fatty, juicy chop without splitting or going slack while a soft bread does the holding rather than a firm crust.

The build assumes the meat is already right, because the wrap cannot correct it. Properly cleaned, wound, slow-grilled *kokoretsi* is chopped on the board while hot and seasoned there with oregano, salt, and lemon. The *pita*, a soft thick round, is warmed flat on the griddle until it bends without cracking and is faintly blistered but never crisp. The chopped offal is laid down the length of the bread while still hot, kept restrained on extras so the meat leads, then rolled into a tight cone and papered immediately to set the shape. Good execution warms the *pita* enough to fold cleanly, distributes the chop along the whole roll so every bite carries meat, and uses the lemon and oregano to cut the richness so it does not turn cloying in a closed wrap. Sloppy work reaches for a cold or dry *pita* that cracks at the fold, lets the rendered fat soak the bread to a soggy seam, or bunches the meat at one end so the tail is greasy empty bread.

How it shifts is mostly the bread and the seasoning hand. Some counters griddle the *pita* in spit fat for a richer wrap, which doubles down on an already rich filling; others keep it plain so the lemon reads. The chop can come bright with citrus and oregano or plainer with just salt. The same offal served on a cut loaf as a closed sandwich is a different texture contract and deserves its own article rather than being crowded in here, as does *kokoretsi* itself. What the wrapped form reliably promises is intense offal made portable, where a warm pliable bread and a tight fold are the entire difference between a clean package and a leaking one.
