Mix Kulcha is the Punjabi *kulcha* taken to its loaded extreme: a leavened griddle bread split and filled with a combination of spiced vegetables rather than a single one. Where a plain *kulcha* is a soft, slightly tangy maida flatbread cooked on a *tawa* or in a tandoor, the mixed version turns it into a stuffed parcel where the filling carries as much weight as the bread. The angle here is breadth of flavor in one bite: potato for body, onion for sweetness, sometimes paneer or peas, all bound with chilli, coriander, and dried mango or pomegranate for sourness.

The build runs in a clear order. The dough is a soft maida mix, often with a little yogurt or baking agent for lift, rested until pliable. The filling is cooked down or mashed so it holds together without weeping water, then seasoned aggressively because the bread itself is mild. A ball of dough is flattened, the filling pressed into the center, the edges gathered over and sealed, and the whole thing rolled out gently so the seam does not split. It goes onto a hot *tawa* or tandoor wall, then gets a generous brush or smear of butter. Good execution shows an even, blistered surface, a filling that is moist but not soupy, and a bread that stays soft for several minutes after cooking. Sloppy versions tear at the seam and leak, are doughy in the middle from underbaking, or carry so little filling that it is a plain *kulcha* with a rumor of vegetables. The classic accompaniment is *chole*, the spiced chickpea curry, with raw onion and a green *chutney* alongside.

Variations track the filling. Aloo, paneer, onion, and Amritsari styles each foreground one element; the mixed version exists precisely to combine them, and no two cooks weight it the same way. Some griddle it hard for crisp edges; others keep it soft and pillowy. The chickpea pairing it is almost always served with, *chole*, is a substantial dish that deserves its own article rather than being crowded in here. What stays constant is the format: a soft, butter-slicked stuffed flatbread built to be torn by hand and eaten warm.
