The craft is matching a gentle meat to a bread that will not overpower it. Because *cotto* is mild and yielding, it does not want the hard crusted roll a strong *crudo* can carry; it sits better on a softer crumb, a *michetta* or a tender white loaf that compresses to the ham rather than fighting it.
