The thing that defines this sandwich is a place and a protected standard rather than the cheese type alone. *Caciocavallo Silano* is a PDO stretched-curd cheese named for the Sila, the high forested plateau straddling Calabria and Basilicata, and the designation fixes what would otherwise be a loose southern category: the milk, the cattle area, the spinning of the curd, the gourd shape, the tying in pairs, the minimum maturing. It is firm, pale gold, smooth-bodied, and savoury, sharpening as it ages but kept within the bounds of its protected character rather than running to the extremes a farmstead wheel might. The *panino con caciocavallo Silano*, a sandwich of the Calabrian and Lucanian counter, is a frame for that reliable, place-defined cheese and the discipline to let one good wheel be the whole thing.

The craft is matching the age of the cheese to the bread and to heat. A younger *Silano* is supple and faintly sweet, sliced thick and laid in slabs, willing to slacken against a warm crust, which is why the region also griddles it until the outside blisters and the inside pulls into threads, then folds it hot into bread. An older one is drier and more piquant, cut thinner and met with a sturdier crusted loaf and sometimes a fig, a few walnuts, or a thread of honey so the sharpness has a counter. The bread is plain because a wheel made to a protected standard is consistent and assertive enough on its own, and a flavoured loaf would only argue with it. The cold build is assembled close to eating; the griddled one is eaten the moment it leaves the iron.

The variations stay inside the cheese and the same young-or-aged, cold-or-griddled logic: the slabbed mild version, the aged build finished with honey or *mostarda*, the griddled slab eaten hot. The generic *caciocavallo* of the wider South and the rare Podolica-breed *podolico* are different cheeses with different characters, and each deserves its own article rather than being crowded in here.
