In Greece the fries normally go in the cone alongside the meat, so leaving them out is a deliberate, common request, and the whole angle here is what the *patates* contribute structurally and what changes in the round once they are gone.

The rest is unchanged and assembled in the usual order: warm griddled *pita*, *tzatziki* on the bread, carved *gyros* off the spit, tomato, onion, rolled tight. The fries inside a *pita gyros* are doing real work: they add bulk, a starchy backbone, and crucial dry texture that soaks up rendered fat and *tzatziki* so the wrap holds together rather than turning to a wet bundle. Take them out and the sandwich is lighter, more directly about the meat and the sauce, with nothing absorbent in the middle. Good execution accounts for that by going a touch lighter on the *tzatziki* and making sure the tomato is not dripping, so without the fries to mop up moisture the *pita* does not go soggy and the base does not blow out.
