*Pita Gyros Horis Tzatziki* is the standard *pita gyros* ordered without its defining sauce: *horis tzatziki*, no garlic-yogurt at all. Of every subtraction on this list this is the most consequential, because *tzatziki* is not a side condiment in a *gyros*, it is the binding element, and the entire angle here is what the wrap has to become once it is gone.

The order is otherwise intact: warm griddled *pita*, carved *gyros* off the spit, tomato, onion, fries, rolled into a cone. But *tzatziki* normally does three jobs at once: it coats the bread so the filling adheres, it brings cool acidity and garlic to cut the fat of the meat, and it moistens an otherwise dry stack. Remove it and a careless build is dry, crumbly, and prone to falling apart, because nothing is gluing the meat and *patates* to the *pita*. Good execution replaces the function rather than just deleting it: a slick of olive oil or the meat's own juices brushed on the bread for adhesion, ripe tomato carrying moisture and acid, and often mustard or a little ketchup added in the *tzatziki*'s place so the round still has a sauce doing the cutting and binding. The meat should be carved juicy, not bone-dry, since there is no dairy to rescue it. Some shops automatically offer mustard, ketchup, or extra tomato as the stand-in; others hand it over plain and the result is leaner and drier by design, which is exactly what some customers want. The garlic-yogurt *tzatziki* itself, how it is salted, strained, and seasoned, deserves its own article rather than being crowded in here; at this entry the single variable is its absence and what a good shop substitutes to keep the wrap from collapsing into a dry bundle.
