Some counters treat ketchup and mustard as the baseline and serve *tzatziki* only on request; others keep *tzatziki* primary and add a restrained line of ketchup for those who ask. The northern, ketchup-and-mustard *gyros thessalonikis* tradition it grows out of deserves its own article rather than being crowded in here; at this entry the single variable is the ketchup and how well its sweetness is balanced against the salt and fat around it.
