The angle is specific and worth separating from the broader extra-vegetable order: leaves bring a particular crunch and a watery freshness that behave very differently inside a hot wrap than tomato or onion do.

The order runs as usual with greens added: warm griddled *pita*, *tzatziki* on the bread, carved *gyros* off the spit, tomato, onion, then a layer of shredded lettuce or leaves, fries still in unless dropped, rolled into a cone. The leaves' job is light, cool crunch and a clean, almost neutral freshness against the fat of the meat and the garlic of the *tzatziki*, a different texture from the acid snap of tomato or the bite of raw onion. Good execution uses crisp, dry, finely shredded leaves added late so they stay snappy and do not wilt against the hot meat, and keeps the *tzatziki* in check so the round does not turn watery. Some shops keep proper crisp leaves on hand and add them with restraint so they lift the wrap; others reach for tired lettuce and the round suffers for it, which is why the quality of the greens is the whole test here. A full plated Greek salad alongside, *horiatiki* with feta and olives, deserves its own article rather than being crowded in here; at this entry the single variable is the *salata* folded inside and whether the leaves were kept crisp and dry enough to add to the wrap rather than waterlog it.
