Shami Kebab Roll is a Hyderabad handheld made by rolling a *paratha* around a *shami* kebab, spiced minced-meat patties bound with lentils. The angle is the kebab's texture. A *shami* is not a coarse grilled skewer; it is meat and *chana dal* cooked together and ground to a smooth, dense paste, then bound, often with egg, and pan-fried into a fine-grained patty that is soft and almost creamy inside with a crusted exterior. Wrapped in flatbread it makes a richer, more tender roll than a *seekh*\-based one, with the lentil giving it body and a faint earthiness.

The build runs in order. Minced meat is simmered with *chana dal* and whole spices until both are soft and the liquid has cooked off, then ground to a tight paste, kneaded with chopped onion, green chili, and herbs, shaped into flat discs, and shallow fried until deeply browned and crusted on both faces. A *paratha* is griddled on a hot *tawa* until golden and just crisp. The patties are laid along the bread, dressed with sliced onion, lime, fresh coriander, and usually a mint or yogurt chutney, then the *paratha* is rolled tight and often paper-cinched at the base. Good execution is unmistakable: the kebab has a dark crust but a soft, smooth, well-spiced interior that holds without crumbling, the *paratha* is crisp-edged but foldable, and the onion and lime keep the richness from going heavy. Sloppy execution means a kebab that falls apart from too little binding or too much *dal*, a greasy patty that has soaked the bread, a raw or brittle *paratha*, or a bland mix with no chili, herb, or acid to lift it.

It shifts with the meat and the spicing. Mutton or beef gives the classic deep, fatty *shami*; the spice mix, often warm with clove, cinnamon, and pepper, is the real lever between a mild and a robust roll. The chutney choice, a tangy yogurt versus a sharp mint, swings the balance against the dense patty. It belongs to the same roll family as the *seekh* kebab versions, but the coarse-grilled skewer is a distinct preparation that deserves its own article rather than being crowded in here. A shami kebab roll lives or dies on a patty that is finely bound and well spiced enough to stay soft, intact, and flavorful inside the bread.
