The *Wit Broodje* is the soft white roll, and it is the most common bread for sandwiches in the Netherlands. *Wit* means white; *broodje* is the small roll. This is the default carrier, the one a counter reaches for unless you ask otherwise, and the one most fillings are built around. It is not a sandwich by itself but the neutral foundation that lets the filling speak. Its whole job is to stay out of the way.

A good *wit broodje* is judged on softness and structure at once. The crumb should be light and pillowy, the crust thin and yielding rather than crackly, and the flavor clean and mildly sweet with no sourness. It needs just enough internal strength to hold a filling and survive being picked up, but the defining quality is tenderness. Sloppy versions go wrong in two directions: a roll left out too long turns leathery and chewy in the wrong way, while an underbaked one stays doughy and pasty in the center and gums against the filling. As a carrier it is absorbent and forgiving, which is why it pairs so well with moist fillings, soft cheese, or a warm croquette whose sauce it can soak up a little. The trade-off is that it adds almost no flavor and little resistance, so a heavy or saucy filling can overwhelm it and turn the whole thing soft.

In use the *wit broodje* underpins a huge share of the Dutch counter: cheese, ham, egg salad, *filet americain*, a *kroket* pressed in warm, or just butter. It scales from a plain soft roll to a slightly enriched, milkier version depending on the bakery, but it stays squarely in neutral-carrier territory. A crustier white roll or a *puntje* with more bite is a different proposition that deserves its own article rather than being crowded in here. Its natural counterpart is the *volkoren broodje*, the wholewheat option with backbone and its own flavor. The *wit broodje* is the opposite bet: say nothing, hold everything, and let the filling carry the sandwich.
