The Broodje Omelet is a folded omelette in a roll, a plain, national-scale Dutch lunch built to put a hot egg into the hand. It is café and home territory rather than snackbar territory, and its angle is honesty: there is no sauce or processing to hide behind, just eggs cooked properly and a roll that fits them. A good one is quietly excellent; a bad one is instantly obvious, because a rubbery overcooked egg has nowhere to hide between two halves of bread.

The build is omelette first, roll second. Eggs are beaten with salt, sometimes a splash of milk, poured into a hot buttered pan, and cooked gently until just set, then folded to a size that matches the roll, often a soft white puntje or bol. The folded omelette goes in warm, sometimes with nothing else, sometimes with a few additions worked into the egg. Good execution means the omelette is just set and still tender, folded so it sits flat in the roll without hanging out both ends, and the bread is fresh enough to compress around it. Sloppy execution is egg cooked hard and dry until it squeaks, a fold so thick it forces the roll open, or a damp omelette steaming the crumb to mush before it reaches the table. The egg should be soft and barely holding; the roll should close.

Variation lives in what goes into or onto the egg. The plainest version is salt and egg alone. From there it picks up cheese melted into the fold, diced ham, fried onion, chives, or sliced tomato, each pushing it toward a fuller breakfast roll. Some kitchens dress the bread with a thin line of mayonnaise or mustard; some serve it open-faced as an uitsmijter-adjacent plate rather than a closed roll, which is a different eating experience. A warm, just-set folded omelette is what defines the Broodje Omelet.
