The carne asada fries torta is a sandwich built from a dish that was already complete. Carne asada fries are a San Diego plate in their own right: a tray of fries buried under grilled marinated beef, melted cheese, guacamole, sour cream, and salsa, eaten with a fork. The torta takes that whole loaded tray and packs it into a soft roll, so the defining move is the same one behind the California burrito, the fries go inside the bread, not beside it. The starch is doubled on purpose. The fries are not a side here; they are a structural layer that soaks the meat juices and the salsa and keeps them from going straight through the roll.

The craft is in heat, order, and timing. The carne asada is grilled hot and chopped so it stays tender and folds into the pile rather than sitting in slabs. The fries have to go in still hot and reasonably crisp, because a fry that has steamed soft adds nothing but weight; their job is to absorb the wet elements while holding enough of their own texture to register against the meat. A version with adobada or al pastor swaps the grilled beef for marinated pork; a surf-and-turf build adds shrimp; the California burrito runs the same fries-inside logic in a flour tortilla instead of a roll.
