Me skordo means "with garlic," and the name signals intent: this is the version where raw garlic is the headline rather than a background note. The angle is heat and persistence. A wrap dressed with this sauce delivers a sharp, almost peppery garlic bite up front and a flavor that stays on the palate long after the last bite, which is exactly what its audience wants against rich grilled meat.

Construction follows the familiar order with the garlic dialed up. Strained yogurt and hard-squeezed cucumber still form the base and still have to be done properly, but here a larger quantity of raw garlic is grated or pounded to a smooth paste and worked through so the sharpness is even rather than landing in violent pockets. This profile belongs on fatty pork gyros and well-charred meat, where a milder sauce would simply vanish and a strong one cuts straight through the richness. It is the deliberate opposite of the garlic-free version and a distinct choice rather than a default, and the mezze form served with bread deserves its own article rather than being crowded in here. The test is restraint inside boldness: powerful garlic that still tastes clean, never the burnt, sulfurous note of garlic gone wrong.
