Balık Dürüm is grilled or fried fish rolled into a wrap instead of stuffed into a split loaf. It is the wrap-form cousin of Istanbul's famous fish sandwich, and it reads as the less traditional of the two: where the loaf version is a fixture of the waterfront, the dürüm is a quieter option that exists alongside it for people who want something they can eat one-handed while walking. The angle here is portability. A dürüm holds its shape better than a loaf, drips less, and folds the same fish and sharp garnish into a tighter, denser package.

The build is straightforward and follows the same logic as the bread version, only rolled. A fillet of oily fish, typically the mackerel or bonito that the loaf version also leans on, is grilled or pan fried and laid down the centre of a thin flatbread. Raw onion sliced fine, a handful of lettuce or rocket, and a hard squeeze of lemon go on top, and the bread is rolled tight so the fish, the onion bite and the citrus stay in every mouthful. Good execution shows in the fish: cooked through but still moist, the skin crisped rather than rubbery, the bones picked out properly so nothing surprises you. The flatbread should be soft and pliable, warmed just enough to fold without cracking. Sloppy versions overcook the fillet until it is dry and flaking apart, skip the lemon so the oily fish has nothing to cut it, or wrap a cold, stiff bread that splits down the seam and spills the filling before you have finished.

Variations track what is being landed and where it is sold. The fish swaps with the season the same way the loaf version does, and some vendors add a sumac and onion mix or a few sliced tomatoes for extra acidity and moisture. The proportions shift too: a fish heavy roll for people who want it as a meal, a leaner one with more salad for a lighter snack. The loaf version, Balık Ekmek, is the older and more famous of the pair and deserves its own article rather than being crowded in here. The dürüm reads as the same flavour idea built for mobility rather than for sitting by the water with a plate on your knees.
