Bánh Mì Đậu Hũ Kho

A Bánh Mì Đậu Hũ Kho borrows its whole character from a clay pot. Kho is the Vietnamese braise in caramelized sugar and seasoning, the technique behind thịt kho, and applying it to tofu produces a bánh mì that eats dark, savory-sweet, and deeply seasoned rather than light. This is the rich end of the tofu family, the one that comes closest to the mouthfeel of a braised-meat roll, and that richness is exactly what defines it against its fried and grilled siblings. The frame is the constant every bánh mì shares, the rice-flour-lightened baguette with its thin crackly crust and airy crumb, the đồ chua of pickled daikon and carrot, cucumber, cilantro, and chilli, with the braising liquid itself doing much of the work a pâté would otherwise do.

The craft is in the braise and in the moisture it brings. Tofu is porous, so it drinks the caramel and the seasoning, which is the point, but it also means the filling arrives wet and the bread is at risk from the first bite. A good đậu hũ kho reduces the sauce until it clings and glazes rather than runs, drains the tofu before it goes into the roll, and leans hard on well-drained đồ chua and fresh chilli to cut a filling that is otherwise all depth and sweetness. The bitterness of properly burnt sugar is what keeps the braise from being merely sweet, and a touch of black pepper or chilli in the pot gives it a tail. Done well it is a satisfying, dark, balanced roll. Done poorly it is soggy bread around a sauce that is either flatly sweet or burnt past bitter into acrid, with the pickles unable to keep up.

Its relatives are the other tofu builds, separated by what the heat does to the soy: fried tofu is about crunch, the lemongrass-and-chilli fry about aromatic fire, and grilled tofu about char and smoke, while the braise alone aims for richness and caramel. Each of those is its own sandwich with its own balance to manage, and each deserves its own article rather than being crowded in here.
