Because the substitute lacks animal fat, a little binder and moisture matter more here, and many versions still aim for a feta element, mixed through or stuffed in a pocket, for the salty tang that is part of the dish's identity. The patty is shaped flat and even, then grilled hard for the char that makes a bifteki a bifteki, since smoke and a seared crust do much of the flavor work. Good execution shows a patty that holds together on the grill, takes real color, stays moist inside, and reads clearly of oregano and onion. Sloppy versions show the gap: a crumbly patty that breaks turning, grey from a cold grill, dry and dense from overworking, or so plainly seasoned the plant base is all you taste. Heat and seasoning carry this dish, because there is no rendering fat to cover mistakes.
It shifts by base and by how it is served. Different commercial substitutes vary in fat and bind, which changes how aggressively it can be grilled and how much extra moisture it needs. With feta it leans toward the stuffed bifteki tradition; without, it sits closer to a plain seasoned plant patty. On a plate with bread and salad, or laid into a roll or pita, it plays differently.
