Broodje Haring met Uitjes

Herring with onions sandwich; chopped raw onion on top.

🇳🇱 Netherlands · Family: Broodje Haring & Vis

The Broodje Haring met Uitjes is the herring roll dressed with raw onion: cured haring in a soft roll, topped with finely chopped raw uitjes. It is the version for eaters who want a sharp, pungent bite against the fish rather than the sour of a pickle. The angle is that the onion is the deliberate counterweight, not a sprinkle of garnish, and the sandwich is judged on how its raw heat is balanced against the soft oily cure underneath.

The build keeps everything around the fish minimal. A soft white roll, yielding and not crusty, so it wraps the tender fillet without dragging it out or fighting it. The haring lies along the length, whole or as two filleted halves, glossy and full and clean. Then the uitjes, chopped fine and scattered evenly over the fish so the onion is present through the whole roll rather than dumped at one end. Good execution is a clean, fatty, mildly salted fillet with onion cut small and spread so each bite carries a little sharpness that lifts the richness. Sloppy execution is coarse chunks of raw onion that overpower everything, a heap so heavy the sandwich eats as an onion roll with fish hidden inside, or so little onion that the cure sits flat and unrelieved. Fineness of the chop matters as much as the amount: large pieces dominate, a fine even scatter integrates.

Variation is mostly about the onion. The classic move uses small mild onion chopped fine; a sharper raw onion pushes the whole thing more pungent, and a brief rinse or a milder variety tames it for eaters who find raw onion aggressive. Some add pickle alongside, which steers it toward the augurk-dressed version that deserves its own article rather than being crowded in here, and the wholly plain herring roll is its own record again. The roll stays soft and unobtrusive throughout. Judged on its own terms, the Broodje Haring met Uitjes works when the haring is good and the uitjes are chopped fine, spread evenly, and kept in proportion so the onion sharpens the fish instead of swallowing it.
