Çiğ Köfte Porsiyon is the plated presentation of çiğ köfte: shaped portions of the kneaded bulgur paste arranged on a plate with lettuce leaves to wrap them in, rather than rolled into bread or a flatbread by the vendor. Here you assemble each bite yourself, which is why the lettuce is the structural element and not a garnish. It is the form for sitting down, eating slowly, and tearing pieces off at your own pace instead of eating something handed to you in a tube.
The plate is composed rather than built into a single object. The vendor shapes the çiğ köfte by squeezing it in the fist, leaving the ridged finger marks that are a tell of hand work, and lines the portions up on the plate. Around or under them go crisp lettuce leaves, lemon wedges, and usually parsley, with pomegranate molasses and hot pepper paste either dressed over the köfte or served alongside so you can adjust as you go. You take a lettuce leaf, set a piece of köfte on it, squeeze lemon, add molasses to taste, and roll it into a small parcel by hand. Good execution shows in the paste being smooth, dense and well kneaded so it holds its shape on the plate without slumping or crumbling, and in the lettuce being cold and crisp enough to wrap without tearing. A sloppy plate gives you a dry, sandy paste and limp, warm lettuce, so the parcels fall apart and taste flat. Because the dressing is applied bite by bite, the porsiyon stays fresher across a long sitting than a pre-dressed wrap, which is a real advantage of the format.
Variation here is mostly in what shares the plate: some places add tomato wedges, sliced onion, pickles, or extra isot on the side, and the heat is left to the eater rather than fixed by the vendor. It is the sociable version, set in the middle of a table for several people to pick at, and it scales up well as a shared starter. Most shops use the meatless paste, kneaded by hand from bulgur and spices with no raw meat. The wrapped dürüm and ekmek forms are different builds and each deserves its own article rather than being crowded in here.
