Kahvaltı tabağı dürüm takes the Turkish breakfast plate, the spread of small dishes that normally arrives across a crowded table, and rolls it into a dürüm. The angle is in the name: a kahvaltı tabağı is the plated breakfast assortment, and a dürüm is the thin-flatbread wrap, so this is the plate's full cast committed to a single rolled form. It is a modern concept, built for people who want the breakfast spread without the table.

The build is wrap discipline applied to a breakfast assortment. A thin flatbread, lavaş or a similar soft round, is laid flat and warmed so it stays pliable. The contents are the breakfast-plate set rather than one filling: white cheese or kaşar, sucuk or other cured meat, egg, tomato, cucumber, olives, herbs, sometimes a paste or honey-and-butter, arranged in a line so the roll carries the assortment evenly. The sides may be folded or left open at the ends, then the flatbread is rolled tight and often warmed on a griddle to set it. Good execution is a flatbread warmed enough to roll without tearing, components cut small and laid in a balanced line so each bite samples several plate items, egg cooked so it does not weep, and the roll tight enough to hold without bursting. It is a distinct format from the open breakfast sandwiches and from the kahvaltı burrito, which uses a thicker wheat wrap and a tighter seal; that one works differently enough to deserve its own article rather than being crowded in here.
