Panino con Presnitz

Presnitz (sweet rolled pastry with nuts and dried fruit) sometimes eaten sandwich-style.

The presnitz is a Trieste pastry, not a sandwich, and treating it as a panino is the honest oddity worth naming up front. It is a thin sheet of pastry rolled tight around a dense filling of walnuts, almonds, pine nuts, raisins, candied peel, sugar and spice, then coiled into a flat spiral and baked until the outside is crisp and lacquered and the inside stays close and sticky. When it is eaten sandwich-style it is simply split or sliced and the spiral itself is read as the bread-and-filling in one: the pastry is the structure, the nut-and-fruit paste is what it carries. It belongs on this list as the sweet outlier of the Triestine repertoire, an Austro-Hungarian-leaning bake that the catalog files near a sandwich because that is how it is handed across a counter.

The craft is the roll and the bake. The pastry has to be worked thin enough that the spiral stays crisp rather than turning bready, and tight enough that the filling does not split the coil as it sets; too loose and the nut paste leaks and the structure slumps. The filling is held just moist by the dried fruit and the candied peel so it stays dense and chewable instead of dry, and the contrast that makes the thing work is the brittle lacquered exterior against that sticky centre, the same crisp-shell-over-soft-core logic a fried sweet relies on. It keeps better than most pastries because the sugar and dried fruit are effectively a preserve, which is why it travels and why it reads as a portable, hand-held thing at all.

Trieste and the wider Friulian holiday table keep several of these rolled sweets, and each is its own subject rather than a version of this one. There is the gubana of the Natisone valleys, looser and more brioche-like around a similar filling, the putizza with its denser dough, and the chocolate-laced and rum-soaked hands of the festive season. Each is a different spiral of pastry and nut-fruit paste, and each deserves its own article rather than being crowded in here.
