Pindasaus is a peanut sauce, not a sandwich, and it belongs here as one of the defining condiments of Dutch eating. It is the sauce for saté, the grilled skewers carried into Dutch food through Indonesian cooking, and it turns up routinely on patat as well. Calling it a sauce rather than a dip is the right frame: it is meant to be ladled, not dabbed, thick enough to cling to skewered meat or a heap of fries.
The make starts from ground peanuts or peanut butter loosened with liquid and built up with aromatics. A working base is peanut paste thinned with water or coconut milk, seasoned with kecap manis, garlic, and chilli, sometimes shallot, ginger, lime, or trassi, then warmed so it tightens to a pourable, glossy sauce. The balance is the whole point: nutty body, salty-sweet depth from the kecap manis, a clear chilli heat, and enough acid to keep it from sitting flat. Good pindasaus is smooth and emulsified, thick enough to coat the back of a spoon and hold on a skewer, with the peanut, sweet, salt, and heat all readable rather than one flattening the rest. Sloppy versions are claggy and stiff like loose peanut butter, split into oil and grit, or one-dimensional, just sweet or just salty with no warmth. On fries it has to pour without instantly seizing on contact; over saté it should coat the meat in a layer that does not slide straight off.
Its range is broad. It dresses the patatje oorlog, the loaded fries of peanut sauce, mayonnaise, and raw onion; it sauces gado-gado and other vegetable plates; and it is the standard partner to grilled chicken or pork skewers at snack bars and Indonesian and Surinamese counters. Strengths and spice levels vary by kitchen, from mild and sweet to sharply hot. The Indonesian and Surinamese dishes it anchors, and the loaded-fries combinations built on it, each deserve their own article rather than being crowded in here. The constant is balance and texture: a smooth, pourable sauce where peanut, sweet, salt, and heat stay in proportion.
