This variant exists because ketchup is genuinely standard in large parts of Greece, especially the north, not a foreign imposition, and it is a clean test of whether a shop integrates a sweet sauce or just dumps it on. Some counters treat ketchup and mustard as the baseline and serve tzatziki only on request; others keep tzatziki primary and add a restrained line of ketchup for those who ask.
