Shawarma with Hummus (שווארמה עם חומוס) is the spit sandwich built with a layer of hummus spread inside the bread under the meat, distinct from the open hummus plate topped with shawarma. Here it is a sealed pita or laffa, and it hinges on the hummus working as a structural smear rather than a side. A band of cool, dense chickpea purée against hot shaved meat gives the sandwich body and a temperature contrast, but only if it is spread thin and even; spooned in as a wet lump it slumps and the pocket turns to mush.

The build is a standard shawarma with hummus as the base layer. The bread, pita pocket or laffa, is lined with a smear of hummus before the meat goes in, so it coats the inside rather than pooling at the bottom. Then the freshly shaved meat, turkey, lamb, or chicken, straight off the vertical rotisserie, followed by the usual supporting cast: tahini, Israeli salad, pickles, sumac onions, amba or s'chug to order. The interplay that matters is hummus against the meat's heat and fat, and against the tahini already in the dressing. A good build keeps the hummus thin and well-seasoned so it adds cool richness and binds the sandwich without doubling up flatly with the tahini, and the meat stays the loudest element. Done right, each bite has the warm crisp-edged meat over a cool silky layer with the salad and acid cutting through. Done wrong, the hummus is dumped in thick and warms into a uniform paste with the tahini, the bread goes soggy, or the chickpea blandness mutes the spiced meat instead of supporting it.

It varies first by the meat and how generous the hummus layer is, a thin smear staying a background note, a heavy one pushing the sandwich toward something denser and more filling. It varies second by what else is loaded with it, a hummus-and-tahini build reading differently from one that also carries fries, amba, or s'chug. The open hummus plate crowned with shawarma is a closely related but distinct form with its own logic, as are the everything-loaded and amba-forward builds, and each deserves its own treatment rather than a footnote here. They all return to the same idea: spit-roasted meat shaved fresh into bread, here lined with hummus so a cool dense layer carries under the hot meat.
