The steamed cheeseburger is the one American burger built with no griddle and no sear at all. Instead of a flat-top, the patty is set in a small metal tray inside a sealed steam cabinet and cooked in vapor. That single method change rewrites the whole sandwich. There is no Maillard crust, no fried edge, no rendered char; the beef cooks gently and evenly through and comes out soft, loose, and juicy rather than crusted. Everything that defines this burger follows from choosing steam over steel, which is exactly backwards from how almost every other regional burger argues its case.

The defining detail beyond the patty is the cheese, and the cabinet handles it as its own operation. Sharp white cheddar, not the slumping processed slice most cheeseburgers rely on, goes into a separate tray and is steamed alongside the meat until it slumps into a thick, molten pool. The patty is dropped into that pool of melted cheddar so the cheese coats and clings rather than draping on top, and the two come out of the cabinet already fused. The texture this produces is the whole point: a soft, almost spoonable cheddar that a flat-top could not make from a hard aged cheese without it breaking into oil and curd. The roll has to be a soft, absorbent bun, because a steamed patty and a loose cheddar pool carry far more free moisture than a seared burger, and a crusty roll would either fight the tender meat or go to paste under the liquid; the soft bun is engineered to soak that load without collapsing before the last bite.
