The Bocadillo de Chistorra is built around a thin, fresh chorizo-style sausage from the Basque Country and Navarra, almost always cooked hot and tucked into bread while it is still spitting from the heat. Chistorra is narrow, fast-curing, and heavily worked with pimentón and garlic, so it cooks in a couple of minutes and renders a vivid orange fat. The bread is a crusty white barra, split lengthwise and left otherwise plain: this is a sausage sandwich, and anything that competes with the sausage is a distraction.

The build is short and unforgiving. The chistorra goes onto a griddle or a flat pan, sometimes coiled, and is turned until the casing tightens and blisters and the fat runs out bright. The bread is opened and pressed cut-side down into that rendered fat for a few seconds so the crumb drinks it up. Then the sausage is laid in, often folded or cut to the length of the barra, and the bread closed under light pressure. Good execution shows a casing with snap, a hot greasy core, and a lower crust stained orange and slightly crisp. Sloppy execution undercooks the chistorra so the casing is rubbery and the fat stays pale, or wipes the pan clean and serves it on dry bread, which strips out the whole point of the sandwich.

Variations stay close to the sausage. Some cooks add a few rings of fried green pepper or a swipe of soft cooking onion; others keep it strictly bread and chistorra and nothing else. It travels well as a festival and street snack because it cooks fast and holds heat, and it scales down into the pintxo version, a single coil on a small piece of bread, served at the bar.
