Cheese toast is an urban Indian open toast: bread with melted cheese, sometimes with green chutney underneath. It is the plain center of the Indian cheese-toast family, the version everything else is built out from. The angle is simplicity done correctly, a starchy base and a cheese layer melted properly, with an optional swipe of herb chutney as the only flourish.
The build is short and the sequence is what matters. A slice of sandwich bread, white or whatever loaf is on hand, is the base, sometimes lightly buttered so the underside firms up. When chutney is used, a thin even layer of the green coriander-mint blend goes directly on the bread first, before the cheese, so it sits under the melt rather than on top. Grated or sliced cheese is then laid across the whole surface, corner to corner, so nothing is left bare to scorch. It goes under a grill, into an oven, or onto a covered tawa until the cheese melts into a smooth bubbling sheet and the bread edges color. Good execution is a base that stays crisp enough to lift cleanly, cheese melted to an even glossy pull rather than split and oily, and any chutney spread thin enough to flavor without making the bread wet. Sloppy execution is a limp soggy slice under a greasy puddle, cheese left half-melted and rubbery because the heat was too low, or so much chutney that the toast turns soft and sour before it is served.
It is eaten hot and soon, cut into halves or fingers, while the cheese is still molten. Once it cools the cheese sets firm and the texture flattens, so it is made to order rather than held in a case.
Variations build directly on this base. Adding chopped green chilli makes it a cheese chilli toast; onion, tomato, and capsicum turn it into a loaded version; pressing it in a toaster shuts it into a grilled cheese sandwich; a heavier chutney layer leans it toward the Bombay style.
