Falafel with Tahini (פלאפל עם טחינה) is the baseline Israeli street sandwich: fried chickpea balls in pita with a generous pour of sesame sauce, and the whole thing hinges on the tahini being treated as a structural element rather than a garnish. The angle is the sauce. Falafel on its own is dry by design, a crisp shell over a dense, herby interior, and the tahini is what binds the fried balls to the bread and the salad into one cohesive bite. Skimp on it and the sandwich is a bag of dry crumbs; pour it right and every component reads together.
The build is short and the order of operations matters. The pita is opened into a pocket, sometimes warmed, and the falafel is fried to order so it arrives hot with an audible crust. The balls go in first or get pressed against the pocket wall, then the tahini is spooned in heavily, the kind loosened with lemon and cold water until it pours rather than sits, often whipped pale and thick enough to coat without sliding straight out the bottom seam. Chopped Israeli salad, pickles, sometimes fried eggplant or a few chips fill out the rest. Done right, the falafel stays crisp at the edges long enough to reach the mouth, the tahini soaks the interior crumb of the bread without dissolving it, and the salad keeps the richness from going heavy. It is served as a stuffed pocket, eaten standing, with extra tahini and s'chug usually on offer. It varies first by the tahini itself, the brand of paste, how thin it is whipped, whether it is plain or cut with herbs, and second by what rides alongside the chickpea balls: more salad, fried eggplant, amba, pickled mango, a layer of hummus underneath. Half-pita and laffa-wrapped builds are common forms in their own right. Each of those deserves its own treatment rather than a line here, but they all return to the same idea: hot fried chickpea, a sesame sauce poured with conviction, and bread that holds the two together instead of just containing them.
