Kokoreç Yarım Ekmek is the half-loaf serving of Turkey's seasoned lamb-offal sandwich: kokoreç packed into a yarım, half of a long loaf. The half is the hungry person's order, the size you reach for when a quarter will not do and you want kokoreç to be the meal rather than the snack. It is a national street-food format from the same rotating-spit carts, distinguished only by the larger bread and the greater quantity of chopped offal that goes with it.
The cook is the standard one, scaled up. Cleaned lamb or sheep intestines are wound tightly around a horizontal skewer and roasted until the outside crisps and the inside stays tender. A larger portion is shaved off onto a hot griddle, chopped down with twin blades, and seasoned with kekik, pul biber, and salt, usually with diced tomato and green pepper folded through. The half loaf is split lengthwise, often warmed cut-side down on the griddle, and the chopped meat is packed along its full length. Good execution at this size is mostly about proportion and even cooking: the meat has to be chopped and crisped consistently across a bigger fill so the last bite is as good as the first, the seasoning has to be distributed through the whole length rather than concentrated at one end, and the loaf has to be fresh and sturdy enough to carry the load without collapsing. Sloppy work shows as a half loaf that is bread-heavy at the ends and meat-heavy in the middle, under-chopped rubbery pieces, or a soggy crust that gives way under the weight.
The half loaf changes the experience mainly through scale and ratio. Because there is more bread, the crumb absorbs more of the fat and spice, so a competent vendor seasons the larger portion a touch more firmly and keeps the chop crisp so the middle does not go slack under its own moisture. It is a more forgiving size for bread but a less forgiving one for consistency. The quarter loaf, the thin lavaş dürüm, the kaşar-topped build, and the explicitly fatty preparation are each their own format and deserve their own article rather than being crowded in here. As yarım ekmek, this is kokoreç sized to satisfy: the same crisp seasoned offal, just enough of it and enough bread to stand as a full meal.
