Simit Nutella is the modern sweet take on the sesame ring: simit split and filled with chocolate hazelnut spread. It is a recent, deliberately casual variation that treats the savory toasted ring as a dessert vehicle, and its logic is simpler than it looks. Sesame and hazelnut are both toasted-nut flavors, so the spread does not fight the crust the way a random sweet filling might; it extends it. The sandwich works or fails almost entirely on how the spread is applied and whether the ring underneath it is fresh, because there is nothing else in the build to hide behind.
The build is as short as a sandwich gets and the spreading is the only real technique. A fresh simit is split horizontally through its thickness so each half keeps a firm crust and a chewy face. The chocolate hazelnut spread is applied to the cut faces, usually at room temperature so it goes on smoothly and evenly rather than tearing the crumb in cold clumps. The halves are closed gently. Sliced banana is the common addition and brings moisture and a fruit note that lightens the richness; crushed nuts or extra sesame on the spread push the toasted-nut theme harder. The plain simit and its savory filled versions live in a different register built on salt and deserve their own article rather than being crowded in here, as does the honey-and-clotted-cream version, which is sweet but texturally a separate thing. What the Nutella label reliably means is chocolate hazelnut spread as the whole filling, spread evenly and in moderation, on a ring fresh enough to keep its crust against the sweetness.
