Taco de Camarón

The taco de camarón is the open door to an entire wing of coastal Mexican cooking. Shrimp is the protein; the preparation is left deliberately unspecified, because the shrimp taco is really a family of tacos that share an animal and split on technique. Up and down both coasts you will find it fried into crisp fritters, grilled over coals, simmered in garlic, drowned in chile, or wrapped raw-cured in lime. Treating it as one dish is a useful starting point precisely because the variations are so different from one another that each almost needs its own page.

What unites the good ones is respect for how fast shrimp cooks. The meat is sweet, firm, and faintly mineral when handled right, and it goes from translucent to bouncy to chalky in a span of seconds. A careful cook peels and dev;eins, brines lightly so the texture stays snappy, and applies heat with intent and a timer rather than habit. The tortilla, corn on the Pacific side and sometimes flour up north, is warmed and kept pliable so the shrimp stays the event. The shared failure across every style is overcooking: shrimp pushed too far turns rubbery and squeaks against the teeth, and no sauce or garnish brings that back. The second common fault is dull or muddy shrimp from poor sourcing, which a sharp lime and salsa can mask but never fix. Done well, the shrimp is just-set and juicy, sweet enough to carry a simple dress of cabbage, crema, and lime, or assertive enough to stand up to chile and garlic.

From this baseline the tree branches hard. A la diabla takes it deep into a fiery red chile sauce. Al mojo de ajo slicks it in garlic butter. Empanizado breads and fries it for crunch. There are grilled zarandeado-style versions, aguachile cures, and gobernador tacos griddled with cheese and peppers. Each of those treatments changes the shrimp taco enough that it deserves its own article rather than being crowded in here.
