The taco de mole is a taco where the sauce, not the protein, is the entire argument. The meat is almost always chicken or turkey, poached and shredded, chosen precisely because it is mild enough to disappear behind what coats it. What coats it is mole, the layered sauce of Puebla and Oaxaca built from dried chiles, seeds, nuts, spices, fruit, and often chocolate, ground and simmered into something dark, glossy, and impossible to reduce to a single flavor. A taco de mole is, in effect, a delivery system for that sauce: a little shredded poultry, a generous spoon of mole, folded into a tortilla so the sauce can be eaten by hand. The protein is the carrier; the mole is the point.
Making it well depends almost entirely on the sauce, because the rest is restraint. The chicken or turkey is simmered until tender and pulled into loose shreds, then either bathed in warm mole or tucked into the tortilla with the sauce ladled over. The mole itself should be thick enough to cling without sliding off, deep but not bitter, and balanced so no single chile or the chocolate dominates. A soft corn tortilla, warmed on the comal so it stays pliable under a wet sauce, is the standard carrier; this is a taco that wants almost nothing else, perhaps a scatter of white onion and a few sesame seeds, because the mole is already doing the work of five ingredients. The usual failures are a thin or scorched sauce, or so much mole that the tortilla collapses before it reaches the mouth.
Because mole is not one sauce but a family, the taco shifts with it. Mole poblano, dark and chocolate-touched, makes the most familiar version; the green mole verde built on pumpkin seed and herb gives a brighter, leaner taco; mole negro from Oaxaca, the deepest and most laborious, makes the most intense. Turkey, the older festive choice, trades chicken's neutrality for something gamier.
