Tavuklu Gözleme
Tavuklu gozleme is the mild, filling order in Turkey's griddle-flatbread family: cooked chicken loosened with yogurt and onion, sealed in a hand-pulled sheet and dried on a hot iron dome.
Tahinli Pekmezli Gözleme
Tahin and pekmez, the sesame-and-grape-molasses pairing Turks eat by the spoon at breakfast, here spread in thin yufka and dried on a saç until the two pastes melt into one warm swirl.
Sucuklu Gözleme

Kavurmalı Gözleme
A griddled Turkish flatbread built around kavurma, meat slow-cooked confit-style in its own fat until it shreds, then warmed into thin yufka. The fattest, most filling member of its family.
Karışık Gözleme
Karışık gözleme is the mixed-filling griddle round, where the cook doses cheese, greens, potato and spiced beef by the spoonful so no one filling buries the rest, on near-translucent yufka.
Kıymalı Gözleme
Kıymalı gözleme: raw spiced mince sealed cold into a thin sheet of yufka, cooking through and rendering in its own fat inside the fold as the parcel crisps on the griddle.

Gözleme
Before any one filling claims it, the gözleme is the form: a hand-rolled sheet of yufka, sealed flat over a thin filling and browned dry on the domed saç. Cheese or potato is chosen after the fact.
Cevizli Gözleme
Walnut gözleme is the sweet outlier of the family: crushed walnuts with sugar and cinnamon folded in thin yufka, cooked dry on a saç, then drizzled with honey or grape molasses.
