A breakfast crunchwrap is a hexagonal folded package: a large flour tortilla wrapped down over a center of scrambled eggs, bacon, and cheese with a crisp tostada disc buried inside, then griddled flat so the whole thing seals into a sealed hand pie. The crunchwrap format exists to solve one problem, which is that soft breakfast fillings have no texture of their own, and it solves it by hiding a fried tortilla shard in the middle. That tostada is the load-bearing idea. It gives every bite a snap that eggs and melted cheese cannot supply, and the surrounding soft tortilla and fillings, in turn, keep that brittle disc from being dry. The contrast is the entire reason the build is shaped this way rather than simply rolled.
The technique is mostly about the fold and the griddle. Fillings are piled in the center of a large flour tortilla, the crisp tostada laid over them, often with a second softer layer to cushion it, and then the edges of the tortilla are pleated up and over the middle in a series of folds that meet at a point, producing the flat six-sided shape. It goes seam-side down onto a hot dry griddle first, which is what actually welds the folds shut; skip that and the package springs open. The eggs should be scrambled soft and the cheese placed where the griddle heat will melt it into a glue that holds the layers. Restraint with wet ingredients is essential, because any runny salsa sitting against the tostada will soften it within a minute and erase the only point of the format. A crunchwrap that is overstuffed cannot be folded flat and will not seal; one that is under-griddled comes apart in the hand.
It is a breakfast restatement of the standard crunchwrap, swapping seasoned beef and lettuce for eggs and bacon while keeping the fold and the hidden crunch identical. Move the same egg-and-bacon filling into a simple rolled tortilla and you have an ordinary breakfast burrito with none of the textural trick.
