Döner Karışık is the mixed-meat register of Turkish döner: karışık means "mixed," and here it means a single sandwich carrying both chicken döner and beef or lamb döner together. The angle is contrast on the same plate. Rather than choosing between the leaner, milder poultry stack and the richer, more deeply browned red-meat stack, this version shaves from both and lets the two textures and flavors sit side by side in one filling. It only works where a counter is actually running two separate spits, which makes it a marker of a busier, better-stocked operation.

The build is the standard döner sequence done twice over. Two stacks turn, one chicken and one beef or lamb, each layered and cooked so its exposed face crisps before being shaved. The cook draws thin shards off each spit, taking the browned exterior rather than the pale interior, and combines them into a single portion before they go into bread or flatbread with tomato, onion, and the usual dressings. The defining quality marker is balance and freshness from both stacks at once: a good Döner Karışık has roughly even shares of each meat, both shaved hot, so a bite delivers the chicken's lighter chew against the red meat's denser, fattier edge. Sloppy execution leans almost entirely on whichever stack was carved most recently and adds a token few shreds of the other, or scrapes tired meat off a slow spit so one half of the mix is dry and gray while the other is fresh. The two should arrive in genuine combination, not as one meat with a garnish of the other.

The variations track the carrier and the ratio. Some counters tilt the mix toward chicken because it is cheaper and milder, others toward the red meat for richness, and the bread can be a split loaf or rolled flatbread depending on the shop. The single-meat döner, the cheese-loaded version, and the over-rice plate are each their own thing and deserve their own articles rather than being crowded in here. What Döner Karışık is built to promise is the both-at-once experience: two spits, two textures, shaved together hot, in one sandwich.
