The bacon is not a topping; it is fried onto the dog so the casing and the bacon crisp together into a single object. The bolillo is not a long split roll; it is a torpedo of bread slit along one side to make a deep pocket, so the dog and a heavy load of toppings sit down inside the bread rather than balancing on a flat trough. That enclosed, bacon-bound build is the whole sandwich.

The craft is in the cook and the load. The bacon-wrapped dog is griddled until the bacon renders and lacquers the sausage, which fries the casing and threads smoke and fat through every bite.
