Egg Dosa

The egg dosa cracks a raw egg onto the fermented rice crepe and cooks it into the surface as a second skin, not a filling, a roadside griddle move governed entirely by the second the egg goes down.

Chicken Dosa

A fermented rice-and-lentil crepe, spread lacy and gold, asked to do a bread's job for a meat it was never built to hold. The dosa is centuries old; the chicken inside it is recent and undatable.
