The Tosti Kaas is the cheese-only tosti: just cheese, grilled between two slices of bread in the iron. It is the baseline of the whole Dutch tosti family and the version that exposes technique most plainly, because there is no ham, no egg, nothing else to hide behind. A good one is gold and crisp outside with a fully molten interior; a bad one is obvious at the first bite. It is the standing fallback at the café when nothing else appeals and the default home version when the fridge holds little more than bread and a block of kaas.
The build is two slices of plain soft sandwich bread and cheese in the middle, nothing more. The cheese choice carries the whole sandwich: a young to semi-mature Dutch kaas, sliced rather than grated so it forms a continuous molten layer instead of pooling at the centre, laid edge to edge but kept back from the rim. Butter the outer faces so they brown against the hot plates. The iron must be properly preheated, because cheese alone gives the bread no help and a cool plate produces pale, dry slices wrapped around half-set cheese. Good execution gives a sandwich that holds its shape, cracks slightly when pressed, and pulls a clean string when torn. Sloppy execution shows as pale flabby bread, a firm unmelted core when the layer was too thick or the cycle cut short, or scorched cheese welded to the plates when it reached the edge and ran out.
Variation is narrow by design, and that is the point of this version rather than a limitation. Most of it is the cheese itself: a more mature kaas brings sharper flavour and a slightly oilier melt, a milder one stays sweet and stretchy, and a thin smear of mustard inside is a common Dutch tweak that cuts the richness without changing the format. Add ham and it becomes the Tosti Ham-Kaas; add a fried egg and it becomes the Tosti met Ei; both of those, and the meatier and sweeter members of the family, deserve their own article rather than being crowded in here. On its own, the Tosti Kaas stays the reference point: the simplest possible fill, the one that proves whether the iron and the cook know what they are doing.
