Zapiekanka z Szynką

Zapiekanka with ham; diced or sliced ham added to the mushroom-cheese base.

🇵🇱 Poland · Family: Zapiekanka

Zapiekanka z Szynką is the standard zapiekanka with ham added to the mushroom-and-cheese base, szynka diced or sliced into the build. The angle is a single protein addition to an otherwise meatless street snack. The standard version is mushroom and cheese; folding in ham turns it into something closer to a small meal, with a salty, savoury element that has to be integrated rather than just dropped on top. It has to be read on whether the ham is worked into the build and given heat, or scattered cold over the finished base as an afterthought.

The build is the standard toasted form with one extra layer. A half bagietka is split and laid cut-side up, spread with cooked pieczarki and onion; the szynka, diced or in strips, goes on with or just under the cheese, then grated melting cheese covers it and the whole base is run under a grill or salamander until the cheese is fully molten and the bread crisp. Ham placement is the decisive factor. A good kitchen puts the ham under or into the cheese so it warms through and its edges catch a little colour, spreads it evenly so every bite has some, and times the pull so the cheese has melted over the ham and the base has crisped, finished with a restrained line of ketchup or sos czosnkowy. Sloppy execution drops cold ham on top after the grill so it sits limp and unintegrated, uses so little it disappears under the cheese, or lets a watery base undo the bread before the ham does anything.

Variation is in the ham and how it is cut. Diced ham distributes through the cheese and reads in most bites; sliced ham gives larger, meatier pieces with more bite and browning. The cure matters: a mild cooked szynka sits gently, a smokier or more seasoned one pushes the savoury note harder. The mushroom-and-onion base stays standard, and the finishing sauce shifts the register, sweet or sharp. The plain mushroom zapiekanka it builds on is the same street form without the meat and deserves its own article rather than being crowded in here. Kept honest, Zapiekanka z Szynką is judged on whether the ham was warmed into the build and spread evenly under a full melt over a crisp base.
