Döner Pilav Üstü is the over-rice plate: shaved spit meat served on rice, pilav üstü meaning "on top of pilaf." It is the honest outlier in this cluster, not a sandwich at all but a plated serving of the same döner, sometimes with bread set on the side rather than wrapped around the meat. It earns its place here because it is one of the most common ways döner is actually eaten in Turkey, the format people order when they want to sit down with a fork instead of walking with a wrap. The angle is the rice taking the structural role that bread plays everywhere else in the family.

The build is the döner sequence finished over a bed instead of inside one. Rice is cooked as Turkish pilav, the grains separate and buttery, often built on a base toasted with a little fat before the liquid goes in. Meat is shaved off the turning spit in thin crisped shards and laid over the mounded rice while both are hot, sometimes with a spoonful of tomato sauce or grilled tomato and pepper alongside. The defining quality marker is the contact between the two: a good Döner Pilav Üstü has fluffy, distinct rice that catches the rendered fat and juices from the meat without turning into a wet clump, and shavings that are hot and crisp-edged, carved to order rather than scooped from a holding tray. Sloppy execution uses gummy, clumped rice that has sat too long, drowns the plate in sauce so the grains go to paste, or tops it with gray meat shaved well in advance. Because nothing is hidden inside bread here, every weakness in the rice and the meat is visible on the plate.

The variations are the rice and the accompaniments. Some kitchens use plain butter rice, others a bulgur pilavı of cracked wheat, and the garnish can run from a simple tomato sauce to grilled vegetables and a side of yogurt. The wrapped and loaf forms of döner, where bread does the carrying, are each their own construction and deserve their own articles rather than being crowded in here. What Döner Pilav Üstü is built to deliver is the same spit-shaved meat with rice doing the job of the bread, plated where every component has to stand on its own.
